More About Brown Fat

My experiment is going on. Of course, I have no idea if it is really new brown fat that turns me into an oven every time after my daily cold laps in the pool. For all I know, I could have a not-yet-recognized infection or any other disease that makes me burn up. Only thing I know is that I feel terrific – for the moment. But for the sake of an interesting exploration, let’s stick with my brown fat hypothesis. This is what I have learned about about brown fat so far: 1. It used to be thought that only babies (protecting them from hypothermia) or bears (keeping a reasonable core temperature during hibernation) have brown fat. It turns out that traces of brown fat are still around in adult people. – A little aside: Other ways to increase body temperature are increasing surrounding temperature, moving about, shivering, and eating certain “warming” foods like cinnamon, ginger, onions, garlic, rutabaga, coriander, cloves – interestingly foods often used in the winter kitchen. But there is no hint that those foods increase brown fat. Or a shred of a proof that a so-called "Brown Fat Diet" will increase that precious tissue in your body. 2. Brown fat can help weight loss by increasing metabolism speed. 3. Brown fat also can decrease elevated insulin-resistance (also called pre-diabetes) and a diabetic situation. 4. Brown fat can be induced to increase by cold exposure – be it by swimming in cold water, immersing in a tub filled with ice water, or dancing in a walk-in food refrigerator (don’t you wish you had one of those at home??). 5. Needless to say, there are already pharmaceutical firms are already working on drugs that might trigger growth of brown fat, without going through the ado of cold exposure. The easy way out, I call it. And definitely not an interesting way, if you ask me. I like to think about cold-induced brown fat as one of the benefits of moderate stress. We all know that stress is bad for you, don’t we? Not necessarily though. Moderate stress might be what makes the body function in the way Nature intended it. With heated dwellings with forgo the winter cold stress – and get sick for it, lacking brown fat. With air-conditioning in the summer, we miss out on the sweating which give our body a good cleanse of all the toxins – and get sick for it. Occasional hunger stress (fasting!) is another beneficial stress mechanism. Not only do we get healthier on occasional fasting, and live longer with less belly ballast, it also seems we get to be happier with fewer pounds – and less depressed. One estimate is that there are about three million residential swimming pools in California (I am not even mentioning the pools in Florida and all across southern U.S.A.). If these pools are anything like our pool here in La Jolla, all those turquoise eyes should be gazing at the sky, basically unused. All, of course, using up precious water resources. How about using them? If you are in decent health (ask your physician), you start by doing a single lap across your pool. Tomorrow two, and every day one more until you reach twenty-one laps. The brown fat will appear very fast – and will help you lose weight. Putting on brown fat, however, might mean walking a fine line: You want to increase your metabolism by cold exposure. But you don’t want to get where most winter swimmers end up: with more fat on their bodies. Fat (of any kind) protects against cold, and makes you better able to withstand long swims in icy water. Water And Energy

Driving up to the cabin for the first time this year, in one of the Maine highway restrooms I encountered something new: plain cold water for washing my hands. Finally! I had always wondered why we waste so much hot water and energy for washing our hands. Of course, recently a study had come out that showed that hot water does not remove more bacteria than cold water – the whole effect depends on the detergent and the rubbing action plus the water flow. So, somebody acted on this new insight. Just think if all the thousands of highway restrooms and all the restaurants would change to plain cold water! We would all be the better for it. And since I am at it: If you are not elderly and not frail and not sick, please, shut off the air conditioner this year! The Japanese reactor accident has shown us that energy comes with a price – and I guess, not many of us would want to pay with our lives for limitless atomic energy. When we moved into our house some long time ago, we found, it had a central air conditioner. We tried it one night – and couldn’t stand it. In the worst of hot, hot summer nights we have a simple fan running in the bedroom. Otherwise: Summer is upon us, and we savor every minute of it by slowing down, relaxing, playing it easy. And sweating. Sweating is the natural, seasonal way to detoxify. I am no fanatic, so I think air conditioners at the workplace are fine. Not that I like them – but they help to concentrate on the work instead of idly looking out of the window. And we are not discussing here possible health disadvantages of air conditioners – I want you to give REDUCING a chance before we are talking COLD TURKEY NONE. Herb Of The Year 2011: Horseradish

This should be the International Herb Day 2011 – but it seems several organizations compete with their dates. So, I am making it my own Herb Day. I started the day with an herbal tea from stinging nettle, dandelions, ginger, chives, mints, and a dash of green ground Japanese tea called macha - to open my eyes. My breakfast consisted of – you know my routine by now - congee (Chinese rice soup from brown rice) with sauerkraut and pickled grape leaves. They are my own harvest from last year, just cooked in rice vinegar and frozen, high in resveratrol, and a real pest in the garden! What is more delightful to find a way to turn an annoying weed into a delicious food! For lunch I had olive paste on black sesame rice crackers. For dinner I am invited to a neighborhood potluck party, and I will bring hors d’oeuvres: Olive paste (can be substituted with chopped olives, on Belgian endive and/or apples slices, topped with leftover pieces of white asparagus and chives from the garden. The uses for herbs are unlimited: as condiment, as decoration, for healing purposes, for taste in food and comfort in a hot bath. This year, the International Herb Association made horseradish the herb of 2011 – don’t try it in your bath, though! Horseradish root, grated has the familiar pungent taste which goes well with bland fish or bland meats – in Germany we use it with boiled beef, which is a boring a dish as one can imagine. With horseradish, it suddenly is exciting for the taste buds. Serve it fresh mashed potatoes, made from scratch. What makes Armoracia rusticana, as it is known in Latin, so pungent are its volatile oils. They also give it its healing properties: antibacterial, digestive. It certainly gives your sinuses a good blow-out. It is also used in urinary tract infections and bronchitis, and promotes sweating in a fever, which can be beneficial. And in Natural Medicine we view it – together with stinging nettle, dandelion, chives, wild garlic, and others – as one of the essential cleansing spring herbs. Horseradish also contains potassium, and an interesting enzyme – horseradish peroxidase, now used widely in neurobiology. Magnesium, calcium, phosphorus are building strong bones. That does not mean you should gorge on it – a little goes a long way; too much would be a poison. Overdosing on fresh horseradish (cooking destroys the toxic compounds) shows in gastro-intestinal irritation, nausea, vomiting, diarrhea, weakness, sweating, and disorientation, and possible death. Before I knew that it would become famous this year, namely in the winter, I planted a horseradish root in a pot. For months, it did nothing, as eagerly as I observed the phallic thing for signs of life. Then, after I had put it outside when there were still frosts expected, I noticed it had developed side-shoots. And as soon as the rain stops today I will plant it in a bigger container. It would be unwise to plant it in the garden as it is a tough customer and prone to spreading robustly. – Perhaps that was one of the reasons our forefathers recognized it as one of those invigorating plants with which we might fight dwindling health. Read More
